Retro Recipe Revamp

Original retro Chicken Casserole

INGREDIENTS

  • 4 cups, cooked, chopped boneless chicken breast (about 4 breast)
  • 1/4 cup chopped green onion
  • 1/4 cup chopped red bell pepper
  • 2 tablespoons,chopped flat leaf parsley
  • 1 (8 ounce)can sliced water chestnuts, drained and chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • Cooking spray
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup shredded Swiss cheese
  • 3/4 cup crushed potato chips

DIRECTIONS

  • 1
    Combine chicken and next 4 ingredients in a large bowl; stir well.
  • 2
    Combine mayonnaise and next 5 ingredients in a small bowl, stirring with a whisk.
  • 3
    Add mayonnaise mixture to chicken mixture; stir well to combine. Spoon mixture into 11 x 7 inch baking dish coated with cooking spray, and sprinkle with cheese. Top cheese evenly with chips. Bake at 400 degrees for 13-16 minutes or until bubbly and chips are golden brown.

And now for the revamp.  I replaced the sour cream and mayonnaise mixture for plain greek yogurt.  If you have never used greek yogurt to cook with, yet, you are missing out.  It add flavor, is packed with nutrients, and is easier on your waistline.  Additionally, replacing a creamy, high fat cheese, such as swiss, with a hard, lower fat cheese such as parmesan is also a waistline saver.

Revamped RETRO CHICKEN CASSEROLE

INGREDIENTS

How long have you been modeling/enjoying photography?  Off and On since I was 14.

Who are your favorite Pinup Models? Past or present inspiration?  Marilyn Monroe, Betty Page, Katty DeLux.

What is some of your favorite clothing lines? Favorite Designers?  Monkey Wrench Clothing and Evil Pawn Jewelry.

If you could shoot with any photographer, past or present, who would it be?  I would love to work with Varga, Paper Moon, and Dynamite Dames.

What is your favorite color and why?  Toss up between blue and green, blue because it has become my signature color and green because I think its sexy as hell.

If you could have dinner with anyone, living or dead who would it be? Jesse James, my family and his family were friends.





How did you get your model name?  A fluke, now Im too afraid to change it cause everyone knows me by it.  Would love a pin up name.

Retro Recipe Revamp

Hash Brown Potato Bake
Spray 2 qt. casserole
Place in casserole–
4 c. Frozen Hash Brown Potatoes; partly thawed
1/2 c. chopped onion (Cook in a little water til tender then drain)
1 can condensed cream of celery soup
1 pkg. cream cheese (3 oz.)
Heat until cheese has melted.
Pour over potatoes in casserole.
Bake 350° F. oven for 1 hour 15 mins.
Remove from oven and top with–
1/3 c. grated cheese
Place in oven again until top cheese melts.

Revamped Hash Brown Bake
4 c. Frozen Hash Brown Potatoes; partly thawed
1/2 c. chopped onion 
1 tsp thyme
1 tsp paprika
1.5 tsp dijon mustard
1 can condensed cream of celery soup
1 pkg. neufchatel cheese (3 oz.)
Heat all ingredients (except hash browns) until cheese has melted.
Pour over potatoes in casserole.
Bake 350° F. oven for 1 hour 15 mins.
Remove from oven and top with–
1/3 c. grated cheese (mixture of cheddar and Swiss)

Place under broiler  until cheese melts and becomes golden brown.

Tell me about your featured photo(s). When were they taken? Why are they
your favorite?


All my pictures are recent as of 2010, and I love each of them for
different reasons. Whether it was the costuming, bursts of giggle fits,
and bringing pinup to a unique location or collaboration of ideas – all my
photo shoots have fabulous memories attached to them.

How long have you been modeling/enjoying photography?

My career as a pinup began in 2010 by doing promo shoots for my burlesque
troupe, Minette Magnifque. I’m also an improv actress and for me, modeling
is an extension of being on stage.  I love portraying characters and
emotions. As for enjoying photography, my parents were avid collectors of
vintage collectables. I grew up in a home that was like a very loved and
lived in museum!!

Who are your favorite Pinup Models? Past or present inspiration?

Huge love to all these dolls, from the past: Bettie Page, Bette Davis,
Esther Williams, Mae West; from the present: Bernie Dexter, Idda van
Munster, Ms. Monster, Micheline Pitt; and for a modern twist, Katy Perry.

What is some of your favorite clothing lines? Favorite Designers?

I lovelovelove DotsDiner. Her aprons are unique, creative and flattering
on all body types. Banned dresses from the UK are always adorable. Rene
Rene in Atlanta has a fantastic line of original  vintage-style dresses.

If you could shoot with any photographer, past or present, who would it be?

Gil Elvgren, Alberto Vargas, Roy Varga, Andy Warhol and Annie Liebowitz.

What is your favorite color and why?

Pink. Pink. And Pink!! I always gravitate towards it. I even choose my
sorority based on our colors – Pink and Blue. Shout out to Delta Phi Mu of
Daemen College!!

If you could have dinner with anyone, living or dead who would it be?

I’d throw a dinner party for all the divas I respect for their talents,
Mae West, Bette Davis, Lucille Ball, Mary Pickford, Gwen Stefani, Katy
Perry and the Everleigh Sisters.

How did you get your model name?

I’m like the Sean Combs, Puff Daddy, P.Diddy of PinUp Names!! My given
name is Michelle Schmalheiser, I was named after my great-uncle Morris,
who passed away before I was born.  My family called me “Shelly” and in
high school, I was nicknamed “Schmals”.  At some point in time, I dropped
the “y” and became Shellie. I liked the way it looked better with Schmals.
… so here I am as a pinup model, entertainer and producer, Shellie
Schmals.

Potatoes Au Gratin
Cut cold boiled potatoes into dice and then season with salt and pepper and place a layer in a baking dish. Sprinkle with fine crumbs and one tablespoon of finely minced onion, two tablespoons of finely minced parsley. Place in a second layer and season, then pour over the last layer two cups of cream sauce. (Three level tablespoons of flour and one cup of milk make a medium sauce) Sprinkle with fine crumbs and a little grated cheese and bake in a moderate oven twenty-five minutes.


Revamped Potatoes Au Gratin
2 cans sliced new potatoes
1 cup reduced fat shredded cheddar cheese
Cream Sauce (3 TBSP flour to one cup of half and half)
Salt
Pepper
Bread Crumbs
Parsley
Layer drained potatoes in a gratin dish.  Sprinkle with salt and pepper.  Make cream sauce by adding 1 pad of butter to a sauce pan.  Melt butter and add flour.  Whisk until flour has mixed with butter, creating a roux.  Reduced heat and whisk in milk.  Continue to whisk until milk comes a simmer.  When roux mixture has thickened add 1/2 cup shredded cheese and stir until incorporated.  Pour mixture into gratin dish.  Top with bread crumbs and 1/2 shredded cheese. Baked on 350 for 20 minutes.  Before serving sprinkle with parsley.

This last week has been really, really fun! I got to travel to Dallas and hang with some fun ladies, I had my Mean Girls Meeting with some ladies that I love, and will be shooting a horror flick styled 1930's.  I am beyond excited!  I am really blessed to have the people in my life, that I do, and never ever want to forget what they have done for me, with me, and beyond that, showed me!
